GENERAL JOB DESCRIPTION: Assist Head Chef with all kitchen duties. Direct and manages all BOH staff and is the leader when the Head Chef is absent. Ensures that all food production workers are performing their duties as prescribed by the quality standards established by the Head Chef. Maintains all food safety and health code guidelines. Assists with menu planning and creating food specials. Monitors and manages food productions and presentation. Communicates between FOH and BOH.
DUTIES & RESPONSIBILITIES:
• Monitors/manages day-to-day kitchen operations.
o Manages all BOH staff.
o Assists with payroll costs by sending BOH employees home if not needed.
• Assist with food and kitchen equipment ordering.
• Assist with menu planning.
• Assist with hiring, training, motivating and termination of all BOH employees.
• Maintains all food safety and health code regulations- helps with cleaning schedules and making sure all employees are on task and completing their assigned duties.
• Assist with any additional responsibilities or tasks assigned by the Head Chef or General Manager.
• QUALIFICATIONS: Exceptional food and beverage knowledge, extensive kitchen experience, time management skills, strong interpersonal skills, communication skills, culinary degree preferred or equal cooking experience in similar setting, food safety certification.
