Duckfat is looking to add a new member to our kitchen leadership team! The right candidate for the kitchen manager position will bring a positive attitude, excellent communication skills, and the ability to thrive in a fast-paced, high volume kitchen. We are a firmly established Portland restaurant with strong systems, a tight-knit staff, and a collaborative spirit who take great pride in putting out exceptional food and providing excellent service.
This position is the point person for anything and everything related to the kitchen and food at Duckfat, as well as the main channel of communication with the production department and the Duckfat Frites Shack kitchen. You will work closely with our Head Chef and Production Chef on menu planning, food preparation, organizational and cleanliness standards, maintaining ordering and prep list pars, updating and organizing recipes, and BOH scheduling. The right candidate will be able to manage and mentor all kitchen staff, maintain excellent communication with our FOH team, and be able to problem-solve under pressure. This position is closely tied to service, working a minimum of 4 shifts a week on the line.
This right candidate will:
Identify problems in the day-to-day operations and solutions to fix them
Maintain exceptional communication with BOH Leads and FOH Leads
Interview, hire, discipline, and oversee training of all BOH employees.
Oversee all food ordering & inventory and develop relationships with vendors
Oversee maintenance of all kitchen equipment
Maintain, develop, and improve food safety standards
Oversee, develop, and maintain standards of food prep and station cleanliness
Communicate directly with the Dining Room Manager and FOH leads on upcoming menu changes, production and prep concerns, and any food changes related to service
Oversee all food quality from delivery to dining room
Lead the Duckfat line in improving current menu items and developing new ones
Maintain and support a dynamic specials program with seasonal changes
Maintain a positive company culture, professionalism and high staff morale
What we are looking for:
3 years minimum restaurant management experience
Excellent communication and organizational skills
Ability to stay calm, focused, and professional under pressure
Avaiability to work nights and weekends as needed and the flexibility to cover shifts as needed
A passion for service and exceptional hospitality
A desire to work collaboratively within a high functioning team
